Chocolate Muffins with Nutritious Icing
These moist chocolate muffins are a hit with children and adults alike. The icing adds an extra layer of chocolatey goodness while boosting nutrition.
Muffin Ingredients
- 100g baking chocolate, roughly chopped
- 100ml fresh milk
- 70g butter
- 100g soft brown sugar
- 2 eggs
- 140g self-raising flour
- 25g cocoa powder
- Pinch of salt
Icing Ingredients
- 2 scoops BebeLait PediaGain Chocolate
- 30g icing sugar, sifted
- 1 tablespoon hot water
Muffin Instructions
- Combine chocolate, milk, and butter in a heatproof bowl over simmering water until melted
- Add brown sugar and stir until dissolved
- Once lukewarm, whisk in the eggs
- Combine flour, cocoa, and salt in a separate bowl
- Fold the dry ingredients into the wet mixture until just combined
- Fill lined muffin tins and bake at 180°C for 12-15 minutes
Icing Instructions
- Mix BebeLait powder, icing sugar, and hot water together
- Microwave at medium for 10 seconds, stir until smooth
- Drizzle over cooled muffins
