Chocolate Muffins with Nutritious Icing

These moist chocolate muffins are a hit with children and adults alike. The icing adds an extra layer of chocolatey goodness while boosting nutrition.

Muffin Ingredients

  • 100g baking chocolate, roughly chopped
  • 100ml fresh milk
  • 70g butter
  • 100g soft brown sugar
  • 2 eggs
  • 140g self-raising flour
  • 25g cocoa powder
  • Pinch of salt

Icing Ingredients

  • 2 scoops BebeLait PediaGain Chocolate
  • 30g icing sugar, sifted
  • 1 tablespoon hot water

Muffin Instructions

  1. Combine chocolate, milk, and butter in a heatproof bowl over simmering water until melted
  2. Add brown sugar and stir until dissolved
  3. Once lukewarm, whisk in the eggs
  4. Combine flour, cocoa, and salt in a separate bowl
  5. Fold the dry ingredients into the wet mixture until just combined
  6. Fill lined muffin tins and bake at 180°C for 12-15 minutes

Icing Instructions

  1. Mix BebeLait powder, icing sugar, and hot water together
  2. Microwave at medium for 10 seconds, stir until smooth
  3. Drizzle over cooled muffins

Makes approximately 12 muffins.
